Southern cuisine is the most varied of the three. Rich in vegetables, rice and seafood, it has incorporated French, Cambodian and Thai influences into a style that is distinctively its own. It is more heavily seasoned and tropical, spicier and at times sweeter than northern food. Try some specialty in this region: Banh Xeo, Hu Tieu, Nem chua ( Vietnamese fermented pork roll ). We will also experience the country different landscapes and sight to see: from the ' ricebolw ' of the Mekong delta, the bustle of Ho Chi Minh City and Cu Chi Tunnel - an underground network which was excavated by the Vietnamese and used by the Viet Cong during both the French-Indochina War ( 1946 -1954 ) and the Vietnam War ( 1955 - 1975 )

Day 1: Arrive in Ho Chi Minh City ( D )
Meet at Tan Son Nhat Airport, transfer to the hotel in the city centre, on the way we will visit the Reunification Hall, Central Post Office and Notre Dame Cathedral. Enjoy dinner and stay overnight in Ho Chi Minh City.
Day 2: Mekong Delta ( B,L )
After breakfast, we will drive to My Tho, a peaceful town on the bank of the Mekong River. The tour is comprised of a cruise on the Mekong River, a visit to orchards and local homes, a sampan ride on palm-shaded creeks, a taste of seasonal fruit and honey tea and a performance of traditional Southern singing. Return to Ho Chi Minh City for an overnight stay.
Day 3: Cooking Class ( B,L )
After breakfast, we set off to a local market where seasonal fruits, vegetables, herbs and spices are sold. The guide will explain and purchase ingredients required for the cooking class while at the market. The Chef will then introduce the different cooking styles typical of Southern Vietnam and the dishes that will be taught during the class. The lunch time dishes will be created together with the Chef. The rest of the day is free at leisure. Stay overnight in Ho Chi Minh City
Day 4: Ho Chi Minh City - Cu Chi ( B,L )
Transfer to Tay Ninh, the headquarters of one of Vietnam's most interesting indigenous religions Caodaism. Attend the noon mass in the Cao Dai Cathedral. After lunch, we will continue to visit to the amazing complex of underground tunnels at Cu Chi (over 200km long) used during the American war. Overnight in Ho Chi Minh City.
Day 5: Ho Chi Minh City - Departure ( B )
Check out and transfer to the airport for next departure.
